Line your tin. Make sure you line your baking tin with parchment paper to stop the cookie pie sticking and make it much easier to lift out once cooled.

Add 1 egg and 1 tsp vanilla extract, then mix again until smooth.

Add the plain flour, baking soda and salt. Stir until a cookie dough forms.

Fold in the chocolate chips.

If the dough is quite soft or sticky, place it in the fridge for 20β30 minutes to firm up slightly.
Assemble and bake

Preheat the oven to 170Β°C fan and grease or line an 8-inch round tin.

Press about two-thirds of the cookie dough into the base and slightly up the sides of the tin.

Spoon the Nutella into the centre and spread it out, leaving a small border around the edge.

Use the remaining cookie dough to cover the Nutella, patching the dough together to seal the filling completely.

Bake for 30-33 minutes, until the top is golden brown.
