Description

These banana Nutella stuffed muffins take classic banana muffins to the next level with a rich, gooey Nutella centre that melts perfectly into every bite.

Ingredients

Instructions

  1. Preheat your oven to 160Β°C fan (320Β°F) and line a 12-hole muffin tin with muffin cases.
  2. In a large bowl, whisk together the plain flour, bicarbonate of soda, salt, light brown sugar, and granulated sugar until well combined.
  3. In a separate bowl, mash the ripe bananas until mostly smooth. Add the eggs, melted butter, and vanilla extract, then whisk until fully combined.
  4. Pour the wet mixture into the bowl with the dry ingredients and gently fold together until just combined. Do not over mix.
  5. Fold in the chopped milk chocolate, distributing it evenly through the batter.
  6. Spoon a small amount of batter into each muffin case (about 1 tablespoon).
  7. Add about 1 teaspoon of Nutella into the middle of each muffin.
  8. Cover the Nutella with more muffin batter until the cases are about ΒΎ full.
  9. Bake for 19–22 minutes, or until the muffins are golden on top and a toothpick inserted near the edge comes out clean.
  10. Allow the muffins to cool in the tin for 5–10 minutes, then transfer to a wire rack. Enjoy while warm for the best gooey Nutella centre.
