Kinder Bueno cookie bars are the perfect treat. They are yummy and packed full of chocolate deliciousness. The great thing about this recipe is that you can easily scale up the recipe for a crowd.
A Kinder Bueno is a wafer which is filled with yummy hazelnut cream, which is then covered in milk chocolate and a dark chocolate drizzle.

This is kind of random, but I was going through my snack draw and realised I had quite a few Kinder Buenos. So I thought why not bake something delicious using them?
A couple of months ago I made Kinder Bueno cookies and you guys loved them. So how about making Kinder Bueno Cookie Bars?
Step 1: Start By pre-heating the oven to 160C Fan. Then line a 20x20cm square tin using parchment paper (greaseproof paper). Parchment paper makes taking traybakes out of the tin so much easier.
Here’s a little trick to help you line your tin perfectly…
Cut out a large square about an inch and a half bigger than the tin. Then use scissors cut a diagonal line through each corner (roughly the length of the side of the tin), it doesn’t have to be accurate.
Then place the parchment into the square tin, the corners should automatically fold into place.
Step 2: In a large bowl we are going to add the flour, cornflour, salt, baking powder and bicarbonate of soda.
When making cookies, flour plays an important role during the making process. This is because flour gives cookies their structure as well as texture. Moreover, the type of flour used will also affect the results as the type of flour determines whether a cookie will be soft, cakey, chewy or crispy.
Here is a little science lesson for you. Each type of flour contains different amounts of protein. The more protein in the flour means the more gluten It will produce, therefore resulting in a chewy texture. However, if flour contains less protein it will produce less gluten resulting in a lighter soft texture.
Plain flour is the most versatile out of all the different types of flour as its protein levels are in the 'mid-range gluten content category'. This makes plain flour great for making cookies, cakes and a lot of other different bakes. It's probably the most used flour for baking.
Corn flour is a very fine powder. Adding a small amount to baked goods helps elevate the texture as it provides further structure, resulting in a lightly chewy texture. When I started using cornflour in some of my recipes I noticed improvements in the overall texture. If you don't have cornflour it's absolutely fine, you can still make this recipe without it, it just helps improve the texture and structure of the cookie bars just that little more.
When making cookie dough I like to add a little bit of salt. This helps enhance the flavours in the cookie as well as balance out the sweetness. Most of my recipes use Himalayan salt, mostly because it is the only salt me and my family use. If you have kosher salt you can use that instead.
In this recipe, I used both because they both have different qualities that affect the end cookie bar texture. Baking powder helps create a light and airy cookie and the bicarbonate of soda (baking soda) adds a chewy texture. By using both you enable a light, soft chewy cookie.
Step 3: Once the dry ingredients have been whisked together it is time to move on to mixing the rest of the ingredients together. In another bowl add the butter, sugars, egg and vanilla. Then whisk until well combined.
Step 4: The next step is to add in all of the chocolate pieces and fold them into the cookie dough using a large spatula or wooden spoon.
With the Kinder bars I chopped them up into tiny chocolate chunks and with the Bueno, I cut each individual bar into 8 even pieces. I also added an additional 100grams of milk chocolate which I chopped up into tiny pieces. If you chop the chocolate into smaller pieces it will ensure that each slice of cookie has an equal amount of chocolate.
Step 5: Once you have finished mixing all of the ingredients it is time to add the cookie dough to the prepared tin. Using a spatula or wooden spoon press down the cookie dough into all of the corners of the tin. Once done place the tray into the preheated oven for 17-22 minutes.
When the cookie has finished baking it will still be soft, so allow it to cool completely before attempting to slice it into portions.
For this recipe, I sliced the cookie bar into 12 individual slices however, if you prefer a smaller portion size you can also slice it into 16 bars instead.
These cookie bars are loaded with lots of delicious kinder Bueno and kinder chocolate pieces. They're super easy to make and delicious.
Pour all of the kinder chocolate into the bowl as well as the milk chocolate chunks and continue to fold them in until equally distributed.
Add all of the cookie dough mixtures to the prepared tin and flatten out using a large spatula, making sure to push the dough into each corner.
Place the tin in the preheated oven for around 17-22 minutes.
Once baked allow the cookie to cool fully in the tin.
After the cookie has cooled slice it into 12-16 portions and enjoy.
Store the rest in an airtight container for up to 5 days to maintain freshness.
The great part about this recipe is that you can customise the kinder part and replace it with your favourite chocolates or biscuits like Oreos and Biscoff biscuits.
